Korean Braised Short Ribs 갈비 찜

Galbi Jjim 갈비 찜, or Korean Braised Short Ribs, is a comfort food of ours. It is soft, flavorful, and very hearty. It is perfect to eat as a main dish or as a side dish. Contrary to popular opinion, it is fairly easy to make. In about three hours, you can have a huge portion that can last you for a very long time.
We have a sweet palate, and so instead of using regular potatoes, we used sweet potatoes in our galbi jjim. It’s a wonderful combination of flavors which you will truly love!
What you Need:
3 lbs Beef Short Ribs
8 cloves Peeled Whole Garlic
5 1 inch thick Ginger pieces
2 big Carrots
2 Sweet Potato/yam
Peeled and sliced Onion
2 tsp Salt and Pepper
5 tbsp Sugar
1 cup Soy Sauce
Hon Dashi
1 tbsp Korean Red Pepper Flakes
Sesame Seeds
What To Do:
Clean the short ribs first by removing the excess fat and attached membranes. You want a clean looking piece of meat with still a little bit of fat remaining just without the tough membranes. Rinse the meat in cold water.

Score the meat by slicing it diagonally as shown in the picture. Do this on both sides of the meat.

Next boil all the ribs in salted water. This is done for two purposes. One is to precook the meat and the other is to clean the meat of its blood and impurities. Boil for 20-25 minutes.
In the mean time, peel and slice up the carrots and sweet potato. Immerse them in water to preserve color and freshness.

Remove short ribs and set aside in bowl to cool. Save 4 cups of the beef broth.
While the meat is cooling, in a large pot, on medium high heat, add some vegetable oil and a little bit of sesame oil (optional) and begin frying the garlic and ginger–ginger should be peeled and sliced.

After about 3 minutes, add in the onions and stir. Stir until the onions are translucent.

Add in the soy sauce, sugar, red pepper flakes, salt and pepper, 4 cups beef broth, and a pinch of hon dashi. First bring to a boil then simmer.

Next, slice the meat in 1 inch thick pieces.
Add in the sliced meat to the pot and simmer. Sprinkle in some sesame seeds. Simmer for 2 hours.

After 2 hours, add in your carrots and sweet potatoes. Cook for an additional 15 minutes or until the carrots and potatoes are very soft.
You are done! Be sure to sprinkle some sesame seeds for presentation.
